Bûche Chocolat Mangue Passion
Deux ans sans recettes sur ce blog ! Que d’occupations entre mes diverses activités professionnelles et personnelles mais je n’oublie pas ce site qui m’a fait vivre tant de belles choses et m’a permis de belles rencontres gourmandes et pas que !
En cette fin d’année 2024, année très mouvementée, pleine de mauvaises nouvelles et à la fois riche sur le plan personnel (la vie, lorsqu’elle nous met KO, nous apprend à relativiser et à profiter de la vie et des personnes que l’on aime), voici une idée de dessert dont les parfums me sont très souvent demandés en atelier.
Je vous conseille de réaliser l’insert au moins deux jours avant car il doit être congelé à cœur avant d’être inséré dans la mousse. La mousse quant à elle, doit être réalisée au minimum la veille de la dégustation surtout pour une bûche car le démoulage doit se faire congelé.

Ingrédients (pour un moule à bûche de 25 cm de long et 9 cm de large)
Insert mangue passion
250 g de purée de mangue et de passion
40 à 50 g de sucre
3,5 g de pectine NH
125 g de dés de mangue (facultatif)
Dacquoise à la noisette
25 g de noisettes en poudre (ou 20 g + 5 g de fécule de pomme de terre)
35 g de sucre de canne
1 blanc d’œuf (environ 35 g)
Feuilleté croustillant
20 g de chocolat au lait (de couverture dans l’idéal, type Azelia de Valrhona par exemple)
80 g de purée de noisettes (ou de praliné)
40 g de crêpes dentelles brisées
Mousse au chocolat
Il s’agit de la mousse du Royal (ou Trianon) sur base de pâte à bombe, que vous retrouverez dans la recette du Royal, ici.
Préparation
Insert mangue passion (à réaliser en avance)
Mélangez la pectine avec ¼ du sucre.
Faites chauffer la purée de fruits avec les ¾ du sucre restant, jusqu’à 40°C.
Incorporez le mélange pectine / sucre à la purée de fruits tiède puis faites cuire jusqu’à deux minutes après l’ébullition pour activer les propriétés de la pectine.
Facultatif : laissez tiédir, fouettez puis ajoutez les dés de mangue.
Versez le mélange tiédi dans le moule à insert et faites prendre au froid (congélateur) plusieurs heures (une nuit dans l’idéal).
Biscuit dacquoise
Dans un saladier, mélangez toutes les poudres ensemble (tamisées si possible).
Dans un second saladier, battez le blanc en neige au bec d’oiseau puis incorporez-y les poudres peu à peu tout en soulevant la masse délicatement.
Versez cette pâte sur la plaque du four recouverte d’un tapis cuisson et étalez-la pour lui donner la forme d’un rectangle de 10×30 à 35cm environ en fonction de votre moule à bûche. Normalement vous en avez bien assez pour faire un rectangle plus large cependant faites attention à garder une bonne épaisseur de biscuit.
Faites cuire 10 à 15 minutes à 180°C. Surveillez le temps de cuisson.
Feuilleté croustillant
Faites fondre le chocolat au bain-marie puis hors du feu, ajoutez la purée de noisettes. Mélangez puis incorporez les crêpes dentelles brisées et mélangez à nouveau. Réservez.
Vous étalerez ce croustillant sur le biscuit découpé (23 x 7 cm) puis vous réserverez cette plaque au frais afin de faire durcir le tout.
Mousse au chocolat
Il s’agit de la mousse du Royal (ou Trianon) sur base de pâte à bombe, que vous retrouverez dans la recette du Royal, ici.

Montage
Versez la mousse à mi-hauteur du moule à bûche.
Insérer l’insert mangue passion, partie arrondie vers le bas. Celui-ci doit mesurer 2 cm de moins que la longueur de votre moule à bûche donc 23 cm ici.
Recouvrez avec la mousse qui déborde puis déposez la plaque croustillant feuilleté + biscuit en appuyant un peu afin de faire ressortir légèrement la mousse sur les côtés.
Réservez au congélateur 12 heures avant de démouler.
La décoration
Plusieurs choix sont possibles :
- la bombe velours (couleur brun ou caramel) à pulvériser sur la bûche congelée (et bien congelée sinon c’est la catastrophe assurée 🙂 ) .
- le glaçage miroir que l’on verse également sur la bûche congelée.
- le cacao en poudre non sucré.
Réservez la bûche au frais après la décoration, laissez décongeler environ 6 heures puis pensez à la sortir environ 15 à 30 minutes avant la dégustation.
